Position Summary: Primarily responsible for the preparation, cooking and presentation of a high quality food product, while ensuring that all food safety standards are being followed and that the back of house is always kept clean and presentable
Position Responsibilities:
Sanitation, Health and Cleanliness:
· Maintain sanitation, health and safety standards in all work areas in the Back of House
· Clean food preparation areas, cooking surfaces and utensils
· Uphold all Tijuana Flats and Health Department requirements and standards including, FIFO, cleanliness, use of gloves and safety equipment, proper temperature control, etc.
· Always maintain a clean and presentable Back of House – the Back of House should be “Show Kitchen” ready at all times.
· Stock and restock workstations
Food Preparation and Line Cooking:
· Prep food and products according to Tijuana Flats recipes and standards in order to ensure constancy and quality of product
· Prep, cook, and package batches of food, such as chicken, beef, pork, vegetables, salsa, queso, etc.
· Read food order slips or receive verbal instructions as to food requested by guests and prepare menu items to order following the specific methods and standards to meet the short preparation time requirements
· Measure ingredients required for specific food items being prepared, following the specs determined by Tijuana Flats
· Operate large volume cooking equipment such as griddles, deep fryers, and melters
· Display a sense of urgency towards ticket times, accuracy and maintain a clean kitchen at all times
· Ensure that all food delivered to the guest is, prepared cooked, and presented according to Tijuana Flats high standards of quality and presentation
Miscellaneous
· Participate in all training and meetings provide and required by management
· Provide all guest with above and beyond guest service
· Consistently provide the highest quality of food to all guest
